Zucchini Bread

Made a mad dash through the Boulder Farmers Market this weekend. Came home with lots of yummy fruits & veggies. Using less than 1/2 of the very large zucchini I've made two loaves of Zucchini Bread. Tasty! Now should I make more bread or find other recipes? Decisions, decisions.

Here is the recipe for the Zucchini Bread:

INGREDIENTS
3 eggs
1 cup vegetable oil
2 cups white sugar
3 cups grated zucchini
2 teaspoons vanilla extract
1/2 teaspoon of nutmeg
3 cups all-purpose flour
3 teaspoons ground cinnamon
1 teaspoon baking soda
1/4 teaspoon baking powder
1 teaspoon salt

DIRECTIONS
1. Preheat oven to 325ยบ. Grease and flour two 8x4 inch loaf pans.
2. In a large bowl, beat eggs until light and frothy. Mix in oil and sugar. Stir in zucchini and vanilla.
3. Combine flour, cinnamon, soda, baking powder, and salt; stir into the egg mixture. Divide batter into prepared pans.
4. Bake for 60 to 70 minutes, or until done.

Back from the Land

It's so hard to come back from a Disney vacation and get back to "things as usual". My brain lingers on the adventures experienced and sweet memories made. And every inch of me wishes I was still waiting in a line for the next thrilling ride... Oh well, time to plan the next trip and have something to look forward to! =)

Sugar Snap Peas & Bacon Recipe

Here's a super yummy recipe I used for the delicious farmers market peas we bought this weekend. Enjoy!

INGREDIENTS
1/2 pound fresh sugar snap peas
4 slices of thick bacon
1/2 garlic clove, minced
1/4 teaspoon dried thyme
salt & pepper

DIRECTIONS
1. In a small saucepan, bring water to boil, add peas. Reduce heat; cover and simmer for 4-5 minutes or until crisp-tender.
2. Cook bacon on med heat with garlic and thyme until bacon is just crisp (reserve grease). Cut bacon into bits and add back to pan. Drain peas, add to skillet (with @ 2 tbsp of bacon grease) and saute for 2-4 minutes. Salt and pepper to taste.
